You open your veg box… and there they are — courgettes.

Not sure what to do? This is your answer.

These fritters are:


  • Crispy on the outside
  • Soft and herby inside
  • Ready in about 20 minutes
  • Loved by kids and adults alike


Ingredients (serves 2–3)


For the fritters:


  • 2 medium courgettes
  • 1 egg
  • 3 tbsp plain flour
  • 40g grated cheese (cheddar or parmesan)
  • 1 small clove garlic (optional)
  • Small handful fresh herbs (mint, parsley, or chives)
  • Salt & pepper
  • Olive oil for frying

For the lemon yogurt:

  • 3 tbsp natural yogurt
  • Squeeze of lemon juice
  • Pinch of salt

Method


  1. Grate & squeeze
    • Grate the courgettes.
    • Put them in a clean tea towel and squeeze out as much liquid as you can (this is the secret to crisp fritters!).
  2. Mix it up
    • In a bowl, combine courgette, egg, flour, cheese, garlic, herbs, salt & pepper.
    • You want a thick, spoonable mixture.
  3. Fry
    • Heat a generous glug of olive oil in a frying pan.
    • Spoon in little piles and flatten slightly.
    • Cook 3–4 minutes each side until golden and crispy.
  4. Serve
    • Mix yogurt with lemon juice and salt.
    • Serve fritters hot with a dollop on top.


Make it your own


  • Add grated carrot or sweetcorn
  • Spice it up with chilli flakes
  • Top with a fried egg for a proper meal
  • Wrap in a flatbread with salad for lunch
